01 / ABOUT THE PLACE

About this place

A substantial cut of mackerel resting snugly against seasoned sushi rice defines bo-zushi, the classic pressed rod sushi. At Ibuki, the signature creation is the Ibuki Bo, prepared with wild mackerel shipped directly from Kanagawa Prefecture's Sajima fishing port. Cured to maintain a juicy, fresh-cut quality with a luscious melt of fat, this shime-saba commands attention whether carried along as a formal gift or enjoyed at home for a special occasion.

The mackerel repertoire also features refined variations such as the Ryuhi Bo, layered with fragrant yuzu citrus and the mellow umami of delicate ryuhi kombu, as well as the Platinum Bo, crafted from prime wild specimens weighing well over 1 kilograms. At the shopfront, diners can also pick up grilled mackerel bo-zushi marinated in mackerel fish sauce before being roasted to an aromatic finish—an accessible pick when you crave smoky sear notes.

Beyond mackerel, the kitchen's curing and grilling craft extends to other species, including seared nodoguro (blackthroat seaperch) bo-zushi, briefly kissed by flame to release sweet fat, and domestic unagi bo-zushi, gently steamed, grilled white, and brushed with a house secret tare glaze. Festivities can also be marked with regional celebration boxes like the red-and-white hako-zushi featuring presented sea bream, alongside seasonal pressed sushi rolls.

Most selections arrive neatly pre-portioned, with each piece wrapped individually and set inside an understated rigid gift box, so you can serve them directly once the lid is lifted without getting your hands sticky. Beyond storefront pickup, Ibuki supports same-day delivery throughout Tokyo's 23 wards as well as advance orders, making it a reliable resource for impromptu treats or planned gatherings in and around Akasaka.
